Lemon Curd/Butter

  1. Combine 1 cup Lemon Splashing Syrup with a quarter cup of melted butter and 3 eggs well beaten.
  2. Microwave for 3-5 mins on high, stirring every minute until just thick. Do not overcook!
  3. Use with meringue pie or on wholemeal toast!

Lemon Curd Ice-Cream for 4 – 6

  1. Mix lemon curd with 250ml of thickened cream and freeze.
  2. Use a medium sized muffin mould.
  3. Serve with Quince, Lemon or Bitter Orange Splashing Syrup. It looks stunning!

Pavlova

  1. Fold Lemon Curd (recipe above) into whipped cream and generously cover Pavlova.
  2. Decorate with fresh fruit of your choice.
