Orange Dressing for Fish

Serves 2 people.

2 – 4 pieces firm white fish or 10 scallops
Fresh parsley
1 garlic clove
Bitter Orange Splashing Syrup
Olive oil
Salt and pepper

  1. To make dressing, chop 1/4 cup fresh parsley, 1 finely chopped garlic clove, 2 tablespoons Bitter Orange, 1 tablespoon olive oil, salt and pepper to taste.
  2. Combine all ingredients and warm through.
  3. Pan fry fish or scallops in olive oil or butter. Remove from pan and drizzle with dressing.
  4. Serve with a creamed potato and green salad. Decorate with wedges of fresh orange.
