Chicken Tagine with Bitter Orange

To serve 6 people. This is a very simple, quick recipe which can be made the day before and refrigerated.

1 kg boned chicken breast or thigh, cubed
2 onions chopped
150 ml Bitter Orange Splashing Syrup
1 1/2 cups water
2 1/2 tsp paprika and pinch of cayenne
Salt and pepper
1 tsp ground ginger
1 cup chopped parsley or coriander or 50 g ready-to-use coriander
Juice of 1/2 a lemon
1 dessertspoon brown sugar
3/4 cup chopped apricots, dates or sultanas
1/2 cup toasted slivered almonds or walnuts or pinenuts

Soften onions in a little oil in a large pan. Add chicken, water and Bitter Orange Splashing Syrup. Season with salt, pepper, paprika and cayenne. Add parsley/coriander and ginger. Simmer over moderate heat in covered pan until chicken is soft.

Add lemon juice, brown sugar, fruits and nuts. Adjust seasoning.

Serve with rice or new potatoes.
