Quince Roast Chicken
- 1 roasting chicken
- 1 large quince diced (optional)
- Stock or white wine for roasting
- 6-8 tbsp Quince Splash
- 4 tbs yoghurt or cream (optional)
- Stuff the chicken with your usual stuffing recipe or with one large washed and diced quince.
- Roast in covered roasting dish in your normal way, with stock and/ or wine. 10 minutes before the end of cooking, drizzle 2 tbsp Quince Splash over the bird and return uncovered to the oven to create a rich glaze.
- Transfer chicken to a serving dish. Skim fat from the pan and add 4-6 tbsp Quince Splash to the remaining juices.
- Remove from the heat and whisk in yoghurt or cream and season to taste.
- Serve Sauce on the side. Serve with mashed or boiled potatoes and green veg.
- Excellent with roast pork and pork chops too!
