Lemon Curd / Butter
- Combine 1 cup Lemon Splash with a quarter cup of melted butter and 3 eggs well beaten.
- Microwave for 3-5 mins on high, stirring every minute until just thick. Do not overcook!
- Use with meringue pie or on wholemeal toast!
Lemon Curd Ice-Cream for 4 - 6
- Mix lemon curd with 250ml of thickened cream and freeze.
- Use a medium sized muffin mould.
- Serve with Quince, Lemon or Bitter Orange Splash. It looks stunning!
Pavlova
- Fold Lemon Curd (recipe above) into whipped cream and generously cover Pavlova.
- Decorate with fresh fruit of your choice.
