What to do with all of your quinces

This week we’re harvesting our quinces and there is plenty to go around for our products and our pantry. Quite often we get asked what one can do with quinces as many people have enthusiastically planted quince trees in the garden then find dealing with the fruit a bit of a chore. Therein lies the difficulty in a fruit which must be cooked to be eaten! So here are a couple of ideas which don’t take long.

Fried Quince

Fry quince slices in oil and butter and serve with any meat dish for a middle eastern flavour. You can add onion, saffron and a cinnamon stick to the cooking of your meat to really enjoy the middle eastern influence in your cooking. Try this with lamb or chicken.

Baked Quince

  • Large Quinces
  • cup Raw Sugar
  • 50 g Butter (more or less, depending on size of quince)
  • cups warm water or rosehip tea

Wash quinces and rub the skins well to remove the downy coating. Remove the core from each and cut the quinces in half. Place in a baking dish to fit snuggly,  flesh side up. Cover each quince half generously with butter. Sprinkle with sugar. Fill baking dish with the water. Bake in a 180 degree Celsius oven for 45 minutes to 1 hour, until quinces are a golden color and soft.

You can serve these for pudding with thick greek yoghurt and a sprinkle of cinnamon. You can also make them in bulk and then store them in preserving jars to enjoy throughout the year.

Don’t forget to try your quinces with sweet and savoury dishes, it has a wonderful complimentary flavour that enhances flavours without competing. Try it with pork, lamb or chicken.

If Marmageddon has taught us anything it is to buy in bulk! Widespread panic was felt in our household when panic buying cleared the supermarket shelves of the NZ staple spread, Marmite. Did we have enough to last us until July? Investigations deep into the pantry revealed several large jars and blood pressures returned to normal! And the lesson here: always buy in bulk!

Tis the season for a fresh look at Christmas recipes

If you’re looking to do something a little different this Christmas with your festive menu; or you want a note of freshness to suit the warmer climes; try out these recipes from Lowry Peaks:

Cranberry Sauce for Turkey

Gently melt one tub of Lowry Peaks Cranberry Fruit Pate into 1 cup of fresh orange juice (or white wine if you prefer) for the best – and easiest – cranberry sauce. Serve it with your turkey this Christmas. Use the left over sauce in our great leftovers recipe for turkey salad – will be posted soon…

Bitter Orange Glaze for Christmas Ham

½ Cup Bitter Orange Splashing Syrup, 1 generous tbsp English mustard, 250g light muscovado sugar, 15 – 20 cloves

Preheat the oven to 180C/350F/gas mark 4. To make the glaze, put the Bitter Orange Splashing Syrup, mustard and sugar in a small bowl and mix to a thick, paste. Peel away the skin of the ham, leaving a smooth, even layer of fat over the meat. Place the ham in a large roasting tin, then with the point of a sharp knife score the fat in a diamond pattern, but not so deep as to cut right through to the meat. Evenly spread the glaze all over it, stud the ham with cloves and roast for an hour to an hour and a half, until the glaze becomes a dark golden-brown, bubbling crust.
